Recipe Highlight Malvani Shrimp Curry

This dish is tasty and tropical, and if you are in the mood for some seafood, it is a must-try recipe. Malvani shrimp curry is a traditional dish in Goan cuisine. I created the masala from dry spices: coriander seeds, cumin seeds, peppercorn, cinnamon, cloves, and cardamom seeds. With the heat on high, I toasted the spices in a hot pan. After toasting, the ingredients were then placed in a coffee grinder and ground into a fine powder. The wet ingredients included onion, garlic, ginger, turmeric, coconut, and coconut milk. To create the base curry, I blended all the elements. I added the turmeric and chili powder to the wet spices since they were already in powder form.
Once the masala was ready, I combined the wet and dry ingredients in a hot pan oiled with coconut oil. The coconut oil brought out a more citric or tropical flavor in this shrimp dish. Then, I added the curry leaves and the kokum to the masala. The curry leaves added the traditional Indian flavor and gave it a nutty aroma. The kokum imparted a sweet and sour taste. Together these flavors were unique! I added the shrimp to the masala to cook, and the flavors would embed into the shrimp. Finally, I added water to make the curry a bit soupy.
