Potato & Sweet Corn Chowder

Potato & Sweet Corn Chowder is delicious, especially on a cold winter day. This chowder is thick, creamy, and oh so luscious! This recipe is simple and easy to prepare. Your family will enjoy having it for lunch or dinner.

Prepping:

· Wash and prep your onion, potato, and cilantro

· Chop your onion into small pieces.

· Cut your potato into small dices.


Ingredients: To achieve the thick and creamy element in this chowder, I used cream of corn and some heavy cream. The creamed corn added a natural sweetness to this chowder. For this recipe, you will need:

3 tbsp oil

14 oz can of creamed corn

1 large potato

¼ onion

1 tbsp garlic paste

2 tbsp vegetable bouillon

½ tsp turmeric

½ tsp chipotle powder

1 tsp salt or to taste

½ tsp white pepper

4 cups water

¼ cup cilantro

¼ cup shredded cheddar cheese

½ cup cream



Instructions:

1. On high heat, place the oil in a soup pot. Add the onion and sweat it for about 1 minute.

2. Then, add the diced potato to the pan and cook it for approximately 3 minutes.

3. Add the turmeric and the chipotle powder and stir.

4. Then, add the vegetable bouillon, garlic paste, and creamed corn to the mixture. Stir and continue to cook for another minute before adding the water.

5. Next, add the water to the mixture and allow it to achieve a simmer. Put the lid on the pot and reduce it. This should take about 10 minutes.

6. After, add the salt and pepper to the mixture.

7. After that, add the cream and let it simmer for another 5 minutes while continuously stirring.

8. Turn off the flame and allow the mixture to cool for 10 minutes. Add the shredded cheese. It will semi melt into the chowder.

9. Finally, add the cilantro for garnish.



Topper Tips:

1. This is a chowder recipe, so you want it to be thick and have many textures.

2. Cut the potatoes in small dices; some will dissolve into the mixture, and some will stay whole. This will help add texture to the chowder.

3. The cream of corn helps thicken the chowder along with the heavy cream.

4. The cream of corn also has kernels of corn that add to the texture.

5. The vegetable bouillon has some salt. Use the salt recommendations in this recipe or add salt to taste.

6. White pepper is recommended, but black pepper works just as well.
