Indian meals are savory, vivid, and enticing. Most Indian meals require time and hard work to get that way; this makes spices undoubtedly important. In Indian cooking, there are so many spices and masalas (blend of spices) that give the food its aromatic and rich flavor. Although there is an array of spices, some kicks in Indian cooking emerge over others. In my opinion, these would include garam masala, turmeric, coriander, anise, mustard seed, cumin, ginger, and curry leaves.
Although I have taken courses to increase my knowledge of food, I am in no way claiming to be an expert. These spices are what I use in my kitchen to bring out color, flavor, and fragrance in my cooking.
Keep in mind that there is a cook with a fondness for their grandmother's recipes and certain masalas that will include fresh, dried, and powdered herbs to bring out the flavor of food in every household.
