This Indian fish Florentine recipe is my creation. For this preparation, I used cod. Cod is delicious and delicate. It is a flaky fish, so be careful when cooking it. I marinated the cod with some salt, turmeric, chili powder, and a small vinegar amount. I allowed it to sit for 30 minutes. In the meanwhile, I prepared the spinach that I used as the bed for this dish. I used plenty of garlic and cooked it in both oil and a little butter for the spinach. The oil keeps the butter from burning and getting brown. Once I sautéd the garlic, I added the spinach and allowed it to wilt.
I added salt and nutmeg for seasoning and a small amount of cream to thicken the spinach. I prepared the sauce for this dish using ginger, garlic, and onion paste. The cream keeps the base of this sauce smooth and thick. I also used our lemon pepper mustard sauce and store-bought fish sauce to further flavor the sauce for this dish. The fish sauce added a seafood flavor, while the curry powder gave it a slight Indian taste.
I used a spinach bed to assemble this dish and placed two small pieces of cod on top. I drizzled a fair amount of the sauce on the cod. The flavors in this dish were spectacular! Each step in the preparation of this dish was easy.
