Ingredients: There is something extraordinary about a traditional recipe. It reminds you of your mothers cooking, family time, and loving memories. The ingredients in this recipe are traditionally Indian. For this recipe, you will need:

4 tbsp of oil

2 medium potatoes

½ onion

3 Thai chilis

1 tsp cumin

1 tsp turmeric

1 tsp mustard seeds

1 tsp crushed coriander seeds

4 curry leaves

1 ½ tsp salt or to taste

1 tbsp minced ginger

1 tbsp minced garlic or 3 garlic cloves

½ tsp asafoetida

¼ cup of water

Dough:

· 1 cup chapati flour

· ½ cup of warm water

· 1 tsp salt

Instructions:

1. With flame on high, add 5 tbsp oil to a small pan and allow it to heat up.

2. Add the garlic, ginger, Thai chilis, and all the spices, and allow them to cook slightly or for about 3 minutes.

3. Add the onions and allow them to cook until they are translucent or for another 3 minutes.

4. Sprinkle the asafoetida and salt on the mixture.

5. Add the potatoes and stir the mixture well. Allow the potatoes to cook until they are slightly translucent.

6. Add 2 cups of water.

8. Add the chopped cilantro to the mixture and save a small amount for garnish.

9. Heat three cups of oil for frying.

10. Roll the dough and cut it into small pieces. Roll balls that weigh about 30 grams each. From this mixture, I got ten balls.

11. Dust the dough balls with flour.

12. Roll the dough balls and flatten them into a medium-sized circle.

13. . Fry the chapati in the hot oil for 2 minutes on each side or until they are puffed and golden.

Topper Tips:

1. Make sure your pan is hot. You want to fry the ingredients quickly to vary the textures in the dish.

2. Cut your vegetables accordingly. The presentation of the dish or visual appeal is just as important as the taste.

3. The oil should be around 325 degrees when frying your chapatis.

4. Keep the dough balls covered so they don’t dry out.
