How To Make Keema Paratha

Keema paratha can be prepared for breakfast or as an appetizer. This dish is an Indian flatbread that may be stuffed with the filling of your choice. You can use potato or mutton infused with Indian spices. I used lean organic beef for this recipe, and let me tell you, the result was delicious!

Prepping:

· Prepare your dough ahead of time. Allow it to rest while you are cooking your meat.

· Wash and prep your onion, garlic, jalapeno, and cilantro.

· Mince all the ingredients finely. They will be added to the meat as a seasoning.

· The onion should be roughly chopped. It will add to the texture of the preparation.


Ingredients: For this recipe, I used traditional Indian ingredients for all the flavoring. There is nothing like conventional ingredients to remind you of home and mama’s cooking. This recipe takes me back to my childhood and the aromas coming from my mama’s kitchen. It truly is a trip down memory lane for me. For this recipe, you will need:



Meat Preparation

2 tbsp oil

1 chopped onion

1 pound beef

2 jalapenos

10 grams of chopped ginger

10 grams of chopped garlic

2 tsp garam masala

2 tsp coriander powder

1 tsp red chili flakes

2 tsp salt or to taste

1 egg



Dough

2 cups flour

1 cup warm water

1 tsp salt


Instructions:

1. I began with high heat for the meat preparation and added a small amount of oil into a large pan.

2. I put the onions into the pan and allowed them to become translucent.

3. Then I added the meat and allowed it to brown for approximately 10 minutes.

4. Next, I added the garlic, ginger, and jalapenos to the meat and continued to let it brown for another 5 minutes.

5. After the 5 minutes were up, I added the salt and chili flakes. I continued to stir the mixture.

6. At this point, I lowered the heat to medium heat and allowed it to cook.

7. I added the garam masala and the coriander powder and allowed it to cook for another 5 minutes.

8. After this, I turned off the flame and allowed the mixture to cool to room temperature.

9. I tilted the pan and allowed the fat to drain to one side. I then removed the fat from the meat mixture.

10. Once the mixture was cool, I removed the fat and added the cilantro and chives.



Dough Preparation:

1. I incorporated the flour, warm water, and salt and kneaded the dough well until the ingredients had formed a smooth and soft dough.

2. I allowed the dough to rest for 30 minutes while I prepared the meat.

3. Then, I formed dough balls that were approximately 130 grams each.

4. I rolled the dough balls into a small-medium flat circle.

5. Next, I placed 2 tsp of filling in the center of the dough.

6. I closed the dough and flattened it with the rolling pin.

7. I continued to roll the dough until it was thin enough to cook well.

8. On the stove, I had a flat pan preheating on medium heat.

9. I placed the flattened stuffed dough and cooked one side for approximately 2 minutes.

10. After, I flipped the paratha and brushed the oil on the cooked side.

11. I repeated this process on the other side.

12. After that, I whisked one egg and placed 2 tbsp of the egg on the paratha.

13. Finally, I flipped the paratha one last time to cook the egg for about 1 minute. This step is optional but makes the paratha very flavorful and gives it an extra texture.

14. Garnish with cilantro or green onions.



Topper Tips:

1. Mince the onion, garlic, and jalapenos fine. These ingredients are for flavor.

2. The onion should be rough chopped in a medium size. The onion is for flavor and added texture.

3. Drain the fat from the meat well. You want the flavor of the meat and spices to be the star of this dish.

4. Roll your dough to a medium thickness. This will allow it to cook all the way through.

5. If you don’t want to use olive oil to brush on the paratha, you can use melted butter.
