Prepping:
· Wash all your veggies and peppers well.
· Roast your peppers.
· Peel and devein your peppers.
Ingredients: The ingredients in this recipe are basic. The spice levels of the peppers are essential. The peppers that I used do not have a high spice level. They are sweeter. You can always use serrano peppers if you want a hotter salsa. For this recipe, you will need:
· 2 Poblano chilies
· 1 jalapeno
· 1 Anaheim pepper
· 4 tomatillos
· ½ onion
· 3 garlic cloves
· 1 small bunch of coriander
· 1 tsp salt
Instructions:
1. Roast your garlic and peppers, peel, and devein them. Give them a rough chop.
2. Core your tomatillos and boil them until they change color. It should take about 5 minutes on a solid boil.
3. Cut your stems from the coriander.
4. Place all your green ingredients into your blender and add the lemon juice. Blend until smooth.
5. Add your salt and pulse once more.
6. Taste your salsa for salt.
Topper Tips:
1. I used both boiling and roasting for this recipe. It will bring out each of the ingredient's flavors.
2. Do not over roast your peppers as you do not want dark salsa.
3. Blend until you have reached the desired consistency.
