Prepping:

· Prep your salsa; this can be done days ahead. Click on the link for my recipe.

· Crack your eggs in a separate bowl.


Ingredients: You will see a lot of traditional ingredients in this recipe. Be willing to experiment with other salsas. The salsa verde has onion, garlic, cilantro, and tomatillo; therefore, you do not need to add these ingredients. The ingredients for this salsa verde recipe were roasted, and hence it heightens the flavors. You can add more chilis for a spicier taste. For this recipe, you will need:



2 tbsp oil

3 eggs

¼ cup salsa

¼ cup water

½ tsp salt


Instructions:

1. With the flame on high, add the oil to the pan.

2. Add the salt to the three eggs.

3. Whip the eggs thoroughly for about a minute.

4. Pour the eggs into the hot pan and let them cook for about 2 minutes.

5. Move the eggs around until they become dry.

6. Flip the eggs once they reach a golden brown color and allow them to cook for 1 minute.

7. Then, break the eggs with the spatula into large square pieces.

8. Next, pour the salsa over the eggs and mix them.

9. Add the water and allow it to simmer for about a minute.

10. Finally, it is ready to plate. Garnish with cilantro.



Topper Tips:

1. Make sure that your pan is hot when cooking the eggs.

2. The eggs should achieve a golden brown color. This gives the eggs a smokey taste.

3. Whip your egg thoroughly. This will make them fluffier.
