· Wash, clean, and cut the mushrooms into quarters.

· Clean, peel, and chop the ginger and garlic.

Ingredients: The ingredients in this dish are simple but very tasty. These are also ingredients that you can find in almost every kitchen. I love the different textures of this dish in a sea of silken spicy curry. You will find a hint of heat that comes from the chili powder. The chili powder can be substituted for raw chilis. Make this recipe your own by adding or removing any of the ingredients to your liking. For this recipe, you will need:

1 pound of Bella mushrooms

½ cup of peas

4 cloves of garlic

10 grams of ginger

1 tsp cumin

1 tsp chili powder

1 cup onion paste

½ cup cream

2 tsp dried mint flakes or fresh mint leaves

1 tsp salt

4 tbsp oil

Instructions:

1. Add the oil to the pan. With high heat, saute the ginger and garlic for a minute.

2. Add the onion paste to the ginger and garlic and allow it to simmer and cook for about 3 minutes; be careful as this mixture will splatter. Keep the lid on the pot, or consistently keep stirring.

3. Add the chili powder and cumin to the onion paste and allow it to cook for another 1 minute.

4. Then add the mushrooms, salt, and mint to the mixture. Allow the mushrooms to cook for about 2 minutes.

5. After, add the cream to the mixture and allow it to reach a slight simmer.

6. Finally, add the peas to the mixture. Keep stirring and allow the mixture to reach a simmer again.

Topper Tips:

1. Your pan should be on high heat when sauteing the garlic and ginger.

2. Close the lid when cooking your onion paste. It will splatter everywhere.

3. Quarter your mushrooms as they tend to shrink when cooked.

4. You can substitute the cream for milk for a lighter taste.
