Servings: 4

Prepping:
· Clean and cut your green beans, sweet peppers, and mushrooms.
· Peel and chop your garlic and ginger into small pieces.
· Wash and chop your chilis into small pieces.
· Wash, peel, and chop your onions and celery into medium pieces.
Ingredients: The base ingredients for this recipe are traditionally Creole. These ingredients give the dish that intense Creole flavor. The sweet peppers add to the vibrant colors in this recipe. This recipe is light and flavorful. For this recipe, you will need:
4 sweet peppers
3 pods garlic
½ onion
1 celery stick
1 ½ cup green beans
1 ½ cup mushrooms
2 Thai chilis
½ tsp paprika
2 tbsp Creole seasoning
3 tbsp oil
¼ cup water
Instructions:
1. Add oil to your pan. Use medium-high heat and add your onion to the pan. Sweat the onion for one minute.
2. Add the garlic and chilis to the onion and continuously stir for another minute.
3. Then add the celery and sweet pepper and allow them to cook for about 2 minutes. Continuously stir the mixture.
4. Add the water to the mixture and allow the vegetables to cook for 3 minutes.
5. Next, add the Creole seasoning and paprika and stir. Allow the water to evaporate completely.
6. On high heat, add the mushrooms and green beans and stir. Cover the mixture and allow it to cook for 3 minutes.
7. At this point, check for salt. I did not use salt as the Creole seasoning had sufficient salt.
8. Finally, you can add cilantro for garnish. It is optional.
Topper Tips:
1. Your pan should be on medium-high heat when sweating your onion, garlic, and ginger.
2. The flame should be on a high when cooking mushrooms as they will release water.
3. Cut your mushrooms into quarters. This will help them from shrinking.
4. Add or remove chilis according to your spice level.
