This recipe is simple, easy, and so tasty! To make this recipe even easier, I used a small rice cooker. My rice cooker is an older model, and all you do is place the ingredients in the pot and turn it on. It does the rest on its own. It's a blessing in disguise and the biggest reason I will not upgrade it for a newer model; if you have a more recent model, use the white rice setting for this recipe.

Prepping:
· Pre-measure your ingredients.
· Wash your rice thoroughly and drain it.
Ingredients: This recipe consists of very few components, but let me tell you, it packs a punch full of flavor. For this recipe, you will need:
· 2 ½ cups white rice
· 1 tbsp salt
· 2 tbsp olive oil
· ¼ cup lime juice
· 2 tbsp dried coriander
· 3 cups vegetable stock
Instructions:
1. Pour the vegetable stock into the pot.
2. Put the rice in the rice cooker.
3. Add all your other ingredients: salt, oil, and coriander, and stir.
4. Turn on the rice cooker. If you are using a newer model, adjust your settings to a white rice setting.

Topper Tips:
1. Wash and drain your rice well. You don't want your rice sticky from all the starch. You also don't want it mushy from all the extra water.
2. You can use fresh coriander for this recipe, but fresh coriander turns into a very dark color in the rice cooker.
3. Using the vegetable stock gives this recipe extra flavor. If you don't have it, you can also use water, but your rice will lack flavor.
