How To Make Chicken & Black Bean Stir Fry

I love stir fry. It is simple and flavorful. One thing I know for sure is that texture is essential. The meat part of the dish needs to be tender and cooked well. The vegetables need to be slightly cooked but remain crunchy. Oh my goodness, let us not forget that you have to be quick when cooking a stir fry to achieve a dish with all of these elements. Sauces and marinades are the keys to having delicious stir fry. The main ingredient in this recipe is the black bean sauce. It ultimately gave this dish a pleasant aroma and intense flavor.

Prepping:

· Prep your vegetables by washing them thoroughly and cutting them accordingly.

· All vegetables have a medium to large square cut.

· Prepare your nuggets ahead of time if you are preparing them from scratch.

· Prepare your black bean sauce ahead of time and set it aside.

· Finely mince the garlic.

· Slice the jalapenos.


Ingredients: I love stir fry. You can smell the intense aroma of the sauces a mile away. I love the vibrant colors of the vegetables and that a small amount of meat goes a long way. For this recipe, you will need:

1 breast of chicken or 130 grams of nuggets

2 tbsp of olive oil

¼ yellow pepper

¼ green pepper

¼ red pepper

¼ of a jalapeno

¼ white onion

3 pods of garlic

2 tbsp of sesame oil

¼ cup of cilantro



Sauce

1 tbsp of black bean paste

1 tbsp of stir fry sauce

2 tbsp of rice wine vinegar

1 tbsp sugar

1 tbsp water


Chicken Marinade

4 tbsp ginger paste

4 tbsp garlic paste

3 tbsp soy sauce


Nugget Coating

2 eggs

6 tbsp corn starch

2 tbsp flour


Instructions:

1. Cut your chicken into 1-inch cubes.

2. Marinade your chicken in ginger, garlic paste, and soy sauce for about an hour.

3. In a large bowl, beat two eggs. Add the cornstarch and the flour and mix in the chicken pieces. Coat them well.

4. Place four cups of oil on high heat. Allow the oil to heat up well. Test a piece of chicken in the oil to make sure that it is hot enough.

5. Fry all the nuggets and set them aside.

6. In a wok, add 2 tbsp of oil. With the heat on high, add the garlic and the jalapenos. Allow them to cook for about a minute.

7. Add the sauce mixture to the pan and cover it. Allow the sauce to dry. This will take approximately 2 minutes.

8. Then add the peppers and the onions to the sauce mixture. Cook for approximately 1 minute with the heat on high. This will keep the vegetables crunchy and vary the textures.

9. Sprinkle a handful of cilantro over the mixture.

10. Finally, add sesame oil into the mixture and turn of the heat.



Topper Tips:

1. Cut your vegetables accordingly. The presentation of the dish or visual appeal is just as important as the taste.

2. Cut your vegetables into large square pieces to vary the textures.

3. I prepare the nuggets in large portions and freeze them to have them ready for different meal preparations.

4. When preparing the nuggets in large portions, allow the meat to sit in the marinade for 12 hours or overnight.

5. Don’t overcook the vegetables. In a stir fry, the vegetables need to remain crunchy.

6. Don’t use salt in this recipe. The stir fry sauce and bean sauce are salty.

7. The sesame oil will add a sheen to the dish and give it a nutty flavor.
