I love to have breakfast in the morning! I think it is essential and a great way to start the day. Just like everyone else, I have a hectic schedule and am always on the go, so I try to avoid making things complicated in the kitchen during this part of the day. Nonetheless, I try to create healthy and flavorful breakfast recipes to keep my family happy and satisfied in the morning. You can accompany this breakfast dish with a piece of organic wheat toast and light or fat-free organic butter. It is healthy, delicious, easy to prepare, and packed with flavor.

Prepping:
· Prep your vegetables by washing them thoroughly and cutting them into small dices.
· Cut the mushrooms into medium-thick slices.
Ingredients: The ingredients for this recipe are traditionally southwest. I did not add any chili or seasoning to give this recipe some heat. You can add the chili of your choice to this recipe to make it spicy. You can also use the cheese of your choice. For this recipe, you will need:
2 tbsp of organic olive oil
4 eggs
½ of a small onion
2 sweet peppers
½ a Roma tomato
¼ cup low-fat white cheddar
3 Bella mushrooms
½ tsp salt
¼ tsp pepper
cilantro and green chives to garnish
Instructions:
1. On medium heat, add the oil to the pan and allow it to heat up.
2. Then, add the onion and the tomato and sweat it for about 1 minute.
3. Add the mushroom slices to the pan and allow them to cook for another minute.
4. Add salt and pepper to the eggs and give them a moderate whisk.
5. Add the eggs to the pan and slowly incorporate the vegetables by mixing them gently.
6. Next, add a small amount of cilantro and green onions to the scramble.
7. After, take the eggs out of the pan and plate.
8. Then put the cheese on the scramble and let it melt slowly.
9. Finally, garnish with cilantro and green onions.
Topper Tips:
1. Make sure your pan has heated up properly on medium heat. You want to sweat the ingredients but not allow them to receive a full cook or become mushy.
2. Cut your vegetables accordingly. The presentation of the dish or visual appeal is just as important as the taste.
3. The cheese is optional.
4. Don’t use too much oil. You don’t want the dish to have a greasy feel or taste in your mouth.
